RECIPE 1 cup chickpeas 1 cup kidney beans 1 cup quinoa A handful parsley and colander 1 lemon 2K olive oil Water 1K corn starch or 1 flax egg (1 Tbs flaxseed meal + 3 Tbs water) 1/2 teaspoon turmeric 1/2 teaspoon of garlic Salt & pepper . INSTRUCTIONS . 1.Cook the beans, chickpeas and quinoa. Personally i prefer to keep the chickpeas al dente and leave some pieces inside. 2.Add the herbs and little water. 3.Mash and mix it all together. 4.Add the lemon, olive oil and the corn starch or the flax egg (already prepared) 5.Bind it all together and make small (a handfull) burgers. 6.Bake it in the oven for 20 minutes at 200°C, both sides, and then for 5 minutes under the grill. OR In a non stick pan, heat 1 teaspoon olive oil over medium heat. Cook patties about 4 – 5 minutes on each side. . To Serve Ideas: Wholegrain pitta/ burger bun, tomato, avocado, corn, guacamole, sliced or onion, tahini, hummus, mustard. .
